Irish Potatoes and Cabbage Recipe

A good mashed potatoes recipe for left over boiled dinner or leftover cole slaw. This is the first recipe I have ever posted, I hope you enjoy!

Ingredients
  

  • 4 tablespoons margarine or 4 tablespoons butter
  • 2 cups leftover Coleslaw or 2 cups cabbage
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 red potatoes (or whatever you use for mashed potatoes, even instant ones work)
  • 2 cups cooked corned beef, chopped (about 2 cups)
  • 2 ounces shredded cheddar cheese

Instructions
 

  • Wash and chop up you potatoes small and boil in a large pot. Once they are tender, drain and return to pot.
  • Mash potatoes with a potato masher. Add butter and fold in, then milk, salt and pepper.
  • Once you get them to the consistency that you like, add in your leftover cole slaw, corned beef and cheese; mix well.
