I made this for the first time on St. Patrick's Day 2007 ......... I'll make it again next St Patrick's Day - or sooner!

Ingredients
  

  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons olive oil
  • 2 lbs beef, cut into 2-inch cubes
  • 1 1/2 cups tomato sauce
  • 1 cup beef broth
  • 1/2 cup red wine
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup finely chopped fresh parsley
  • 1 bay leaf
  • 3 large potatoes
  • 3 large carrots
  • 3 onions
  • 3 stalks celery

Instructions
 

  • Heat butter & oil in a heavy skillet; brown beef cubes & transfer to crockpot.
  • Add liquids & seasonings.
  • Cut veggies into chunks and add to the crockpot.
  • Cover & cook on low for 9 hours; thicken sauce with cornstarch, if necessary.
